Live in Sonoma county graft all my varietals finding good tannins in Pink Pearl that blend well with lots of other apple varietals and types to balance for long term oak and bottling thereafter
I have a fallow eating fruit orchard (in Australia) gala, fuji lady williams and granny smith it’s an 80 year old orchard we have been making trial batches for two seasons and I was intrigued about your crab apple comments as we have some of those ornamentally. And it hadn’t occurred to me that fruit might add a more astringent note - can you give some advice about blending - and if you can make a great cider only from the eating varieties

have planted several trees but very slow growing... any fertilizer recommedations for getting things going??
Did I hear mid-size trees on 6 ft spacing in rows 12 ft apart? As it seems you favor larger trees.
How about freezing the dolgo, would that help juicing?
Quince - please do talk about it in cider. How do you get any juice?
Have you worked with or planted any American cider varietals like Harrison/Campbell/Kronenbusch? If you have what are your thoughts?

The weirdest amasing ciders I've had had cucumber for a light cider and the other had beet juice added which also was a excellent pink/red cider. I'm more traditional, but find bosc pear added stabilizes long term aging and mellowing like a bourdeau red wine that has merlow
