Here is the answer to the first question: Lightly pasteurized means that it has not been subject to the Ultra High Temperature pasteurization (UHT)that removes all of the nutritional value of the milk. If a milk is UHT, it will not go bad even after being left outside of the refrigerator for almost 6 months. If even the bacteria does not want to go near the milk, you definitely do not want to be drinking it! Lightly pasteurized milks are pasteurized on a low temperature, so they are fortified with nutrition because they are not subject to excessive processing.
