I've been "finishing" RG white beans with a couple "glugs" of whole milk or (even more happily) heavy cream and grated Parmigiana-Reggiano, and my neighbors here in coastal NJ call this a "healthy, nutritious mac-and-cheese." Don't stint on the sea salt and black pepper.
Beans, you gotta have back-ups to your back-ups in the freezer.
20 minutes with the instant pot would cook mine to mush with some fresher ones! I’m at sea level.
Agreed : if not slow cooked, stove top traditional pressure cooker vs : Insant Pot

the sherry vinegar I used I got from whole foods was "Napa valley naturals" good
I love bay leaf
I cook a pound a week on weekends so they are ready to go all week!
With good dry beans that aren’t old, I soak for a couple of hours then cook stove top for 40minutes- while they cook I saute onions, etc in a deep skillet, add the beans to skillet with the aromatics (also some chopped veg, like fresh corn off the cob)

Go seasonal! Ramp pesto with beans; asparagus and green peas with beans; mustards with beans; corn with beans; and so on. Seasonal is the way to experiment - and grow your bean skill.
Agreed re seasonal! If you freeze your ramp pesto, you can enjoy it in the winter months. It’s glorious.
