I have a fallow eating fruit orchard (in Australia) gala, fuji lady williams and granny smith it’s an 80 year old orchard we have been making trial batches for two seasons and I was intrigued about your crab apple comments as we have some of those ornamentally. The weirdest amasing ciders I've had had cucumber for a light cider and the other had beet juice added which also was a excellent pink/red cider. I'm more traditional, but find bosc pear added stabilizes long term aging and mellowing like a bourdeau red wine that has merlow
