I remember making David’s buckwheat chocolate chip cookies using different types of buckwheat that we can get here in Canada - we get the fine kind that is lighter in colour too! It’s fun to experiment with the different types!

Dollop of apricot jam! And the cookie I did a brown butter shortbread and just added the bloomed saffron in ~1-2 tbsp. warm water plus a little extra flour to counter the water. Seems to work alright!

I use Silpats for difficult thin rolled cookies, but I don’t bake on them — I just use them to roll and cut the dough.
