This week we will be making Chargrilled Pear, Blue Cheese and Caramelised Walnut Salad


INGREDIENTS - SERVES 4
For the Salad:
Fresh salad leaves I like to use a mixture of spinach, endive, rocket and watercress
4 firm pears, peeled, cored and quartered - such as Anjou or Bartlett
75g - 100g ripe blue cheese - Crozier would be good

Caramelised Walnuts:
100g walnuts
75g sugar -white or brown
2 tablespoons of water
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1/2 teaspoon salt

For the Dressing:
6 Tablespoons Olive Oil
2 tablespoons red wine vinegar
Sea salt and freshly ground black pepper
