Cooking with the Cap Times: Chef Pip Freeman
Join us for a live cooking demonstration at Kessenich's Innovation Center, hosted by Cap Times food editor Lindsay Christians. This month's demo features chef Pip Freeman of Meat People, who will make basted Delmonico steaks with beet bordelaise.

Freeman was formerly the chef at Three Letters in Brooklyn and opened Meat People with his wife, Jenny Griep, in 2021. He says this is his favorite way to cook one of his favorite steaks, and that beet bordelaise, a dish made by slowly simmering diced beets in red wine and red wine vinegar, is "easily my favorite way to eat beets."
