Jessica Fitzpatrick, APD
Doctor of Philosophy Candidate @Monash University
Jessica Fitzpatrick is an Accredited Practicing Dietitian and PhD Candidate, at Monash University, who has a special interest in providing evidence-based care to patients living with gastrointestinal disorders (GI) such as Inflammatory Bowel Disease, Irritable Bowel Syndrome (IBD) and Celiac Disease. She currently works in a large public tertiary hospital treating patients with GI providing clinical nutrition assessment, dietary treatment and counseling for patients with functional GI disorders. In 2017 she received a public grant to complete her masters research project exploring the relationship of body composition in patients with IBD. She is now undertaking a PhD with Monash University investigating the potential role of emulsifiers in the pathogenesis of Crohn’s disease. Jessica has published her scientific work in peer review journals.

Kristy Du, PhD
Senior Nutrition Scientist @PepsiCo
Kristy Du, who will be moderating this event, is a Senior Nutrition Scientist at PepsiCo where her responsibilities include providing nutrition support for the Quaker North America business. Prior to joining PepsiCo, Kristy completed her Masters and Ph.D. in Nutritional Sciences at the University of Illinois in Urbana-Champaign where her dissertation research focused on dietary protein metabolism as it relates to satiety. During her doctoral training, she also worked with Abbott Nutrition as a Health Policy Intern and conducted research through the Center for Nutrition Learning and Memory. She received her bachelor’s degree in Biological Sciences from the University of California, Irvine. Outside of professional activities, Kristy enjoys spending time with her husband and their dog, exploring new-to-her restaurants, outdoor activities, and cooking.
