Dr. Megan Bell is the Assistant Vice Chancellor of Student Affairs and a professor in the College of Education. Dr. Chris Bell is an Associate Professor of Media Studies in the Department of Communication. Join us to learn about how UCCS has evolved student engagement and support inside and outside of the classroom from the leadership and faculty perspective. Clyde’s Taco Recipe (from America's Test Kitchen)
• 1lb Ground Beef (cooked or uncooked – Clyde’s an animal!)
• 1 onion
• 3 garlic cloves
• 2 tbsp chili powder
• 1 tsp cumin
• ½ tsp oregano
• ¼ tsp cayenne pepper
• 1 tsp salt
• ½ cup chicken broth
• ½ cup tomato sauce
• 2 tsp cider vinegar
• 1 tsp light brown sugar
• Fixings (cilantro highly recommended, cheese, sour cream, HOT sauce!)
• Taco Shells- crunchy or soft.
Heat up some oil in a skillet over medium heat. Add onion and cook until softened. Stir in garlic, spices, and salt and cook for about 30 seconds. Stir in ground beef and cook to your liking (remember, raw for Clyde). Stir in tomato sauce, broth, vinegar, and brown sugar. Simmer until thickened (roughly 10 minutes).
