ACF ChefsForum: Cuisines of Guam "Live from The Greenbrier"
Live from "America's Resort" in White Sulphur Springs, we'll take a virtual flavor journey to the western Pacific Ocean, where Hunter Gentry; a Junior Apprentice at The Greenbrier's Apprenticeship Program and graduate from The Culinary Institute of America in Napa Valley, will demonstrate his favorite dishes from Guam. Modern-day cuisine of the largest of the Mariana Islands, is the result of the cultures and blended flavors of indigenous tribes of Chamorro, with other Pacific Islanders, Asian, European, and American influences. During this presentation, Hunter, who is originally from the Hawaiian islands, will share his insights on Chamorro cooking, the culture, influence of Spain, and the island's food history. Our spotlighted young chef will present on dishes served in Guam, such as kelaguen, bbq chicken and red rice, Kadon Pika (spicy stew).
