All-Star Sonoma Chef Collaboration hosted by Francis Ford Coppola Winery
Francis Ford Coppola Winery will host a virtual restaurant dining collaboration, featuring all-star Sonoma County Chefs: Tim Bodell from RUSTIC, Dustin Valette from Valette Healdsburg, and Mark Stark from Bravas Bar de Tapas! Each chef will demonstrate one course for a progressive dinner with one common summer ingredient carried throughout each dish. Winemaker, Natalie Dale, will taste and pair each dish from Francis Ford Coppola's Reserve limited production wines that showcase distinctive vineyards from Sonoma’s renowned appellations.

Tim Bodell
Culinary Director @RUSTIC Francis' Favorites
Tim Bodell brings almost 25 years of food and wine experience to his role as Culinary Director at Francis Ford Coppola Winery. Bodell relies on his expertise and knowledge to recreate Francis’s cherished family recipes and favorite cuisines from around the world. His background includes years of working in varied roles in many world class operations. Bodell was born in the Philadelphia area where he learned his love of cooking from his mother. Tim landed a job as a dishwasher and he never looked back, landing his first cook job at a restaurant in the suburbs. Bodell continued to hone his skills in local restaurants before attending Johnson and Wales University. Bodell then moved to Oregon to pursue his culinary passions and eventually settled in California to immerse himself in the Bay Area Food and Wine scene. Bodell has been the Culinary Director at Francis Ford Coppola Winery since 2011. Tim and Staff from the Winery had the pleasure to cook at the James Beard House in 2011 and 2013
Dusin Valette

Chef Dustin Valette began his restaurant career at the age of thirteen washing dishes at Catelli’s in his hometown of Geyserville. He took an apprenticeship at Chateau Souverain, a Francis Ford Coppola Estate – beginning the twenty-plus year culinary journey toward his dream of opening a restaurant. The idea of Valette Restaurant began nearly two decades ago over a glass of wine shared between two brothers, Dustin and Aaron Garzini, while sitting at their father’s house overlooking the expansive Alexander Valley. The two dreamed of opening a restaurant which featured the breadth and depth of ingredients Sonoma County has to offer. It would serve high quality, yet honest and approachable food; offer impeccable service and house a collection of boutique, small production wines. In 2015, Valette Restaurant opened its doors to the public, showcasing 47 years of combined restaurant experience, and a deep passion and dedication to Sonoma Country and its food and wine purveyors and producers.
Mark Stark

Bravas Bar de Tapas opened in 2012 as the fifth of James Beard Award Outstanding Restaurateur semifinalists Mark & Terri Stark’s seven restaurants in Sonoma County. Drawn to the Spanish style of lingering over small plates with a glass of wine with friends, Bravas was inspired by the couple’s trip to Barcelona the previous year. Bravas has been hailed by the San Francisco Chronicle as one of the Bay Area’s “Best New Openings” of 2012 and one of the “Top 20 Tapas Restaurants in the US” by Travel + Leisure. Michael Bauer proclaimed the Bravas wood-fired paella “one of five best paellas in the Bay Area.” Mark is a graduate of the Culinary Institute of America in Hyde Park, New York and honed his professional cooking skills in Washington DC and Seattle. Mark was born in Orange County, California and was raised in Solomons Island, Maryland, along the Chesapeake Bay. He and Terri live in Santa Rosa.
