Cannabis Edibles for Bakers: Insights into Baking Quality Edibles
Cannabis Edibles for Bakers: Insights into Baking Quality Edibles is an educational webinar for industrial bakers from the Loyalist College Applied Research Centre for Natural Products and Medical Cannabis (ARC), presented in partnership with the Baking Association of Canada (Ontario Chapter).

The session will feature Dr. Kari Kramp and Barbara Allen from the ARC as well as Chef Scott Royce from Loyalist College's Culinary Skills program. Participants will gain knowledge regarding the challenges faced by bakers in the cannabis and food science industry and insights for baking quality cannabis edibles.

The session will conclude with a brief question and answer session.

Dr. Kari Kramp
Principal Investigator and Scientific Manager @Applied Research Centre for Natural Products and Cannabis
Dr. Kari Kramp, Principal Investigator and Scientific Manager at the Applied Research Centre for Natural Products & Medical Cannabis (ARC), has led applied research and industry-driven collaborations at Loyalist College for the past 16 years. Advanced methods of extraction, including supercritical CO2 extraction, and analytics provide a foundation for innovative product development and applied research efforts to support specific challenges and/or industry barriers to commercialization - including product quality, safety, stability and consistency. Dr. Kramp completed her PhD (Biology) at the Centre for Advanced Research in Environmental Genomics at the University of Ottawa, and her undergraduate and masters degrees in Chemistry at Virginia Commonwealth University.
Barbara Allen
Senior Researcher @Applied Research Centre for Natural Products and Cannabis
Barb has more than 25 years of industrial and management experience in the pharmaceutical industry, working for companies including Astra Zeneca, Glaxo-Smith Kline and Purdue Pharma. Barb began as an analytical chemist and over the course of her career led multidisciplinary teams in pharmaceutical development from proof of concept developability, first time in human trials, to full commercial transfer to manufacturing sites world-wide. As a complement to her industrial career, she has been teaching for more than 30 years, and is currently a faculty member for the Biosciences and Cannabis Applied Sciences programs at the College’s School of Applied Sciences, Skills, and Technology. Barb completed her BSc and MSc in Biochemistry at the University of Toronto.
Chef Scott Royce
Chef and Instructor @Loyalist College Culinary Arts Program
Chef Scott Royce is a talented, passionate, methodical chef and lifelong learner. Directly after high school Chef Scott began cooking professionally while attending George Brown College. Scott has cooked in some of the finest restaurants across the country. His experience ranges from mom and pop scale eateries to fine dining, and hotel experience. Chef Scott became interested in the healing and therapeutic properties of cannabis and edibles during his father’s battle with cancer. Chef Scott applied his knowledge of cooking and baking to infused edible products that successfully improved the quality of the last months of his father’s life. He has continued this work by sharing his expertise with the ARC team, and continues to innovate and expand his knowledge of cannabis and edibles.
