ARRAY's LEAP | Community Cooking Session w/ Jocelyn Jackson
LEAP Presents 'Fixed Price Menu' created by Oakland based cook activist Jocelyn Jackson. 'Fixed Price Menu' is a conceptual menu and tablescape installation that juxtaposes a meal set for Philando Castile and Jeronimo Yanez. Mr. Castile was murdered by Officer Yanez in 2016 after being pulled over for a broken taillight. The project explores how these lives, so close in proximity, both had instincts at a young age to protect and serve, but the intersection of their lives ended with one killing the other. Every meal has the power to tell a story.

We'll come together to prepare two recipes from Jocelyn's menu, a Hibiscus and Chia Cooler and Spiced Black Eyed Pea Spread with Teff Crackers.

Hibiscus and Chia Cooler
Yields: 8 servings
2 cups water
1/2 cup dried hibiscus flowers
3 tablespoons cane sugar, or to taste
1 teaspoon chia seeds per cup served

Spiced Black Eyed Pea Spread
Yields: 4 servings
1 full head of garlic
5 tablespoons olive oil, divided
Kosher salt
freshly ground pepper
1 15-ounce can black-eyed peas, rinsed
1 tablespoon fresh lemon juice
1 teaspoon of berbere spice blend
1 tablespoon chopped fresh chives
1 tablespoon fresh flat-leaf parsley

Teff Crackers
Yields: 20-25 crackers
½ cup brown teff flour
½ cup all-purpose flour
1½ teaspoon baking powder
1 teaspoon salt
1 tablespoon olive oil
½ tablespoon pumpkin seeds
1 ½ tablespoons assorted sesame seeds
⅓ cup + 1 teaspoon water
