Mariano Gonzalez is a world-award winning cheese maker with over 30 years in the industry. He currently serves as Head Cheese Maker for Grafton Village Cheese Company in Vermont, known for its exceptional hand-made cheeses and a long-standing commitment to supporting Vermont’s rural farming community. Mariano’s interest in cheesemaking began as a child helping to make a traditional fresh cheese in his native country of Paraguay. Since then, he has worked throughout the U.S. and abroad, in both production and as a consultant. Mariano’s passion is the creation of raw milk artisan cheeses, with a specialty in English-style cheddars. His cheeses have won numerous awards, including 3 Best Cheddar awards at the World Cheese competition London England. He is a member of the prestigious Guilde Internationale des Fromager. When not making cheese, Mariano enjoys spending time with his family and taking advantage of Vermont’s beautiful landscape and vibrant artisan food scene.
Ruth Flore

Ruth has played a significant role in developing the specialty cheese industry in America for over two decades. Since her early marketing efforts for Vermont Butter and Cheese Company/Vermont Creamery she has been a consultant for the industry bringing specialty/small production cheesemakers’ products to market on both a regional and national level. Ruth has been a leading member of the American Cheese Society since its early days serving as president, conference co-chair, and on the board of directors. Ruth co-founded the Cheese of Choice Coalition in 1999 to protect production and sale of raw-milk cheese in the US. Re-launched in 2015 as the Oldways Cheese Coalition, she serves on the Advisory Committee. Ruth regularly consulted Will Studd in the research, development, and production of the Cheese Slices documentary series. She is a member of the prestigious Guilde Internationale des Fromager.
Amy Sisti-Baum ACS CCP

Amy Sisti-Baum, Certified Cheese Professional, has dedicated her 20+year career to cheese. After studying nutrition in college, she found her greatest love was the enjoyment of food and connecting the source to the plate. Cheese captivated her early on with its all-encompassing representation of history, culture, agriculture, economics, and great taste. She has made, sold, taught about, and served cheese in Europe and the USA and has worked as a sales manager for Grafton Village Cheese Company for the past 8 years. She currently lives with her family in Chapel Hill, NC.
