Exploring Traditional and Emerging Functional Ingredients
Functional ingredients are a growing topic of interest for healthcare professionals and patients alike. Functional ingredients can provide an array of benefits, and new research and discoveries are continuing to be made about their properties. As an emerging area of focus for Registered Dietitian Nutritionists (RDNs), this webinar will provide an introduction to traditional and emerging functional ingredients and their benefits, sources, and practical applications.

This event will aim to:
1. Provide an introduction to traditional and emerging functional ingredients
2. Explore broadly how certain functional ingredients can provide benefits such as energy and mood management
3. Increase awareness of functional ingredients and equip RDNs with the knowledge to counsel patients and clients on the topic

This webinar has been approved for 1.25 CPEUs by the Commission on Dietetic Registration.

Kelly Jones, MS, RD, CSSD, LDN
Owner @Kelly Jones Nutrition, LLC and Student Athlete Nutrition
Kelly Jones is a board certified specialist in sports dietetics and owner of Kelly Jones Nutrition, a media and nutrition communications consulting company as well as a private practice. As a nationally recognized nutrition expert, Kelly is regularly featured in traditional media and consults with national sports organizations. With a plant forward approach, she and her team of dietitians offer resources, tips, recipes and self-paced courses to help optimally fuel the body and mind of those with busy, active lifestyles, in practical ways. Kelly also founded and oversees the services and resources provided by Student Athlete Nutrition, whose mission is to make evidence-based performance nutrition information and practical applications accessible to more high school and collegiate athletes.
Jodee Johnson, PhD
Principal Scientist @PepsiCo Health & Nutrition Sciences
Jodee is a Nutrition Scientist with expertise in functional ingredients and claims. Currently, she is a Principal Scientist supporting the Health & Nutrition Sciences team within the Life Sciences organization at PepsiCo. She manages research to support the Energy & Mood Management agenda. Additionally, the areas she supports within the PepsiCo North America Beverages business include Soulboost, Hydration brands, and the North America Coffee Partnership. Prior to joining the Beverages team in 2020, Jodee supported the Quaker North America business leading oat research on blood glucose and satiety. Jodee holds a M.S. in Food Science and Human Nutrition from The Ohio State University and PhD in Nutrition Sciences from the University of Illinois at Urbana-Champaign.
Charo Mendoza, MS, RDN
Senior Scientist @PepsiCo Health & Nutrition Sciences
Charo is a Registered Dietitian in the U.S. and Mexico with a background in nutritional epidemiology, and more than 10 years of combined experience in public health, academia, and food industry. After 5 years of supporting PepsiCo’s Latin America business in Mexico, she recently moved the U.S. to join the North America team. In her current role as a Senior Scientist on the Health and Nutrition Sciences team at PepsiCo, she provides nutrition science support for the beverages business in the U.S. and Canada, where she monitors and evaluates the science of low-calorie sweeteners on health and nutrition outcomes, coordinates a variety of internal and external nutrition communication and education initiatives on this topic, delivers guidance for new and existing products to achieve PepsiCo’s nutrition goals.
